Referring to the sugar content in a finished wine. A dry wine by definition has no fermentable sugar left. The winemaking definition of dry is less than 2g/L of residual sugar.

Referring to the sugar content in a finished wine. A dry wine by definition has no fermentable sugar left. The winemaking definition of dry is less than 2g/L of residual sugar. Known as Trocken in Germany or Sec in France. It should be noted that wines labelled with the German synonym trocken often still have a few grams of residual sugar left in them to balance the higher acidity of the wines.

Sottimano Barbaresco ‘Pajorè’ 2019

Nebbiolo | Treiso, Italy

From one of the famed Cru's of the Commune of Treiso, Barbaresco. A classic, superb fruit of depth and considerable length here, backed by long tannins of excellent mouthfeel. Loads going on with darker fruits and an array of complexing earthy, savoury notes, spices and blood orange adding layer after layers of subtle complexity. Plenty in the tank here too. Classic Barbaresco. Wait 5 years before trying.

One of the many highlights in this range, the Barbaresco Riserva Montestefano is superb. A big enrobing wine, the Montestefano wraps around the palate with stunning depth. Today, the Montestefano is utterly embryonic, and yet it exudes depth, resonance and pure class. L'Enroulée is a one-off cuvée and is a blend of Le Haie Nardin, which is normally a separate wine, “rolled together” this parcel with the fruit from his vines in Les Quarts-Saint-Vincent.This wine gives a prnounced perfume of white blossom and jasmine.
