The Semillon grapes for this wine are allowed to be infected by a Noble Rot, a fungus called Botrytis. Kind of like the mould that enhances blue cheese. Under the right conditions, it adds layers of yumminess to the fruit, concentrating it through dehydration, yielding an intoxicating wine. This same practice is used to make the great Sauternes of France.
