Solera

The unique yeast that grows on top of the sherry protecting it from oxidation.

Spanish term. A method of perpetually ageing wine in a “pyramid” of barrels. Wine for bottling drawn from the bottom layer. The barrels from this layer, are then topped from the next layer up, and so on until the top layer is reached. This layer is topped by fresh wine made that year. The barrels are typically left 5/6ths full. Each layer in a Solera is called a Criadera, or layers. Fino sherries will have 7 criadera, Manzanilla at least 9 and up to 20. Practically, wineries, simply place them in batches representing a criardera rather than building actual solera stacks. The image below shows the basics of how the system works.

R.Pouillon ‘Les Blanchiens’ Brut Nature 2013

Blend | Vallée de la Marne, Champagne

Notes on the 2012:This is superb. So fine and delicious. Such harmony is not common, the Pinot and Chardonnay are playing together beautifully. It has just the right level of oxidative vinosity, so well supported by a core of fruit that has great length and depth. I keep coming back the the harmony, layers of complexity and balance. Will the Pinot seems to be the dominant, as would be expected in the front and mid-palate, the line and length from the Chardonnay and the mineral nature to this

D'Agata's note below if for the 2012.(a mixture of all the usual Alsace varieties, with a predominance of Gewürtzraminer, Riesling and Pinot Gris): Bright golden straw-yellow. The opulent nose features marmalady botrytis, honeyed tropical fruit and and sweet spice aromas. Densely packed, intense and showy, with ri

Excellent fruit profile building to show an exceptional mid-palate with faded flowers, tea leaves and blood orange at play. Tannins are bold and firm, grape first and pure. With patience, they will yield something quite beautiful.Paul Kaan, Wine Decoded KO 95'Aeroplanservaj' the Wild Aeroplane was Domenico's father's nickname for his
