Referring to the sugar content in a finished wine. A dry wine by definition has no fermentable sugar left. The winemaking definition of dry is less than 2g/L of residual sugar.

Referring to the sugar content in a finished wine. A dry wine by definition has no fermentable sugar left. The winemaking definition of dry is less than 2g/L of residual sugar. Known as Trocken in Germany or Sec in France. It should be noted that wines labelled with the German synonym trocken often still have a few grams of residual sugar left in them to balance the higher acidity of the wines.

The 2016 Barbaresco Riserva Don Fiorino by all reports is a unique and special wine. I have a philosophical soft spot for blends over single vineyards when the goal is excellence without compromise! Details of production are a bit thin. I'd be fascinated to now if this was a continuous ferment adding the best grapes from each parcel whilst the fruit

From Ravera in Monforte. As the vines age they will make Barolo! From Ravera in Monforte, this is made from the youngest vines (that will eventually be made as Barolo) and is made the same way as her three Barolos and then aged in barriques for twelve months. As a baby Barolo, this has some serious pedigree with rich, plush fruit of red berries with crushed flowers. Hard to beat for the money and an ‘affordable’ cellaring option.

This is excellent. Lovely perfume super fine linear long layered tannins. Layered complex flavours of bramble, mulberry, orange skins and florals. Complete harmonious, flowing. The tannins are very impressive so sophisticated superb. Already building a feel of secondary development. Moving into the next phase of development.
