The vines here are owned by one of Leroux’s close friends and are sited in the heart of the Premier Cru, on the east-facing, Beaune side of Savigny. This tends to be the source of the most elegant Savigny wines—so, perfect for powerful years. 17% ABV. “The 1980 Don PX Selección is said to come from a warm and dry year that favored the raisining of the Pedro Ximénez grapes. This has lots of candied fruit and spice and combines the 17% alcohol with a whopping 340 grams of residual sugar. This aged in American oak butts until its bottling in September 2018. Bone Dry!
Chenin. Take the syrup from poached quince and mix it with Créme pâtissière. Entrancing. Lovely, feel like I’m cooking quince. Long fine, excellent acid, draws you in, alive with personality. Bone dry! Phenolics here are interesting, dusty rather than oily. They have a wonderful cleansing feel. Savory with a little oxidative character just enough to add intrigue. Fun. Very good.
