Why is this Wine so Yummy?
This year, all wines were naturally fermented and matured on lees in old wood of varying ages. Further complexity comes from a variety of micro-vinifications that includes portions made via the classic “ex-press” method (where rosé is made in a similar fashion to white wine), saignée, and parcels of both partial and complete carbonic maceration. Schell employs a cold soak to deliver optimum flavour and mouthfeel prior to fermentation. Maturation is on lees for around six months.
With more grip, more texture, and more savoury depth (than Spinifiex’s regular rosé), Luxe is Spinifex’s self-confessed homage to the textural rosés of France’s coastal Mediterranean vineyards – Bandol, Cassis and St-Tropez, and what a homage it is! Perfumed and perfectly pitched in the mouth, it is really hard to nail the descriptors, which range from grenadine and blackberry jube, to all kinds of crushed and roasted herbs. The finish is fine, fine, fine and super fresh. A wine of impressive finesse, and Schell’s finest rosé to date.
